Arachuvitta sambhar ( hotel style )

Ingredients:
           Thuvaram paruppu or thoor dhal - 1/2 cup
           Splited channa dhal or kadalai paruppu - 2 tbsp
           Mixed vegetables - 1 cup ( brinjal,carrot,drumstick,or pumkin)
           Tamarind - small piece ( 1tsp )
           Coriander leaves or cilantro - 1 hand full
           Onion - 1/2 ( chopped )
           Tomato - 1 ( chopped )
           Salt
           Oil
To grind:
           Coriander seeds -2 tsp
           Channa dhal - 1 tsp
           Red chillies - 4
           Fenugreek seeds 1/2 tsp
           Onion - a small piece
           Coconut - 3 tsp
For tempering:
           Mustard seeds - 1 tsp
           Cumin seeds 1/2 tsp
           Curry leaves
           Asafoetida or perungayam






Method:
          Wash two dhals , let them into a cooker plate , add chopped vegetables,onion,tomato and turmeric. Cook for 6 whistles or untill it cooked . Soak the tamarind and extract the juice. In a pan add 1 tsp of oil and fry all the ingredients which is in to grind list. Let it cool and grind to a fine paste. In big pan heat oil then add mustard seeds,when it spluttered add cummin,curry leaves,asafoetida. Then add the cooked dhal and veggies,stir well. Then add tamarind juice,grinded paste and salt. Let it to boil. If you want you can add 1 tsp of jaggery in this. Turn off the stove and add chopped coriander leaves. It is very good to eat with pongal,idly,dosa, or upma.
