Ingredients:
Inji or ginger - 2 cups (chopped)
Chilly powder - 1 tsp ( as needed)
Green chillies - 2 halved
Tamarind - 1 lemon size ( extract the juice )
Jaggery - 2 tbsp
Onion - 1/4 from one full onion
Salt - as needed
Gingelly oil or sesame oil - 7 tbsp
1/2 tsp of mustard seeds and 1/2 tsp of fenugreek seeds ( both are dry fried and powdered )
Metod:
In a pan heat 2 tbsp of oil and fry ginger,green chillies and onions untill golden brown. Let them cool .Grind a paste with salt. In the same pan add another 5 tbsp of oil, put the ginger paste and mix , now add tamarind juice and melted,filtered jaggery in that mixture. Then add powdered mustard and fenugreek seed, mix well. Let them cook untill it became thick paste like halwa. Store in a bottle after it cooled.
