Rasagulla

Ingredients:
     
           Milk - 2 litre
           Sugar - 3 cup or 600 g
           Lemon -1 1/2 or Vinegar - 3 tsp
           Water - 5 to 6 cups
         
Method:

           In a big heavy pan cook the milk without adding water. keep stirring the milk,otherwise it may burn and stick into the pan. When the milk starts to boil add the lemon or vinegar. Keep stirring till all the curd separate from the milk. switch off the stove. Once the milk fat separate from the whey drain all the milk fat with the help of cotton cloth. Wash well the milk fat,otherwise the lemon flavor will not go. After that squeeze the water and put knot over the cloth and hang it on water tap,let it drain all the water. After 2 hours take the milk fat out and kneed well with hands, make it as soft dough. Make small balls out of that dough. In a pressure cooker or in a big pan add sugar and water . When the sugar water starts boiling add the milk balls into the water and cook with lid for 20 minutes. The milk balls came double in size. Now the rasagulla is ready. Let it cool and serve. If you want add cardamom powder too.
