Aviyal

Ingredients:
           Vegetables (carrot, plantain,long beans, eggplant, drumstick) - cut into 1 inch size - 3 cups  
            Coconut grated - 1/2 cup
            Cumin seeds - 1 tsp
            Green chilies - 3(medium in size)
            Curd - 3 tbsp
            Mustard seeds - 1/2 tsp
            Curry leaves - 2 sprigs
            Red chilies broken - 2
            Salt
            Coconut oil
Method:
           In a pan boil all the vegetables with salt and little water and keep aside. In a mixer grinder, take the coconut, cumin seeds and green chilies, grind them as a coarse paste. Heat the pan with coconut oil, add mustard seeds, let it splutter, then add red chilies and curry leaves. Time to add vegetables into the pan, add the coconut paste and curd. Let it boil for 5 min. Check the salt at this time and add more if you want. Now aviyal is ready to serve.
