I am following my mom's recipe. We use this same powder for sambar, pulikuzhambu, non-veg gravies, fried vegetales etc.
Ingredients:
Red chilies - 1 lb or 1/2 kg
Coriander seeds - 1 lb or 1/2 kg
Kadalai paruppu/channa dhal - 1/2 cup
Thuvaram paruppu/toor dhal - 1/2 cup
Any rice - 1/2 cup
Pepper - 1/4 cup
Cumin seeds - 1/4 cup
Fenugreek seeds/methi seeds - 2 tbsp
Fennel seeds - 2 tbsp
Virali manjal/turmeric
Method:
Fry all the ingredients in a dry pan separately, except chilies. Heat the oven for 350 degree and put the chilies in a broad tray, let it for 5 minutes. We can put under the sun also if we want, for one day. Once all the ingredients cooled, grind with mixer grinder or in flour mill. After grinding let it cool. Put into the air tight container for 6 months. In freezer for 1 year.
