For pani poori, we have to prepare poori, masala pani and the filling for the poori.
Ingredients:
All purpose flour/maida - 1/4 cup
Rava/sooji - 1 cup
Potato - 2 (boiled and skin off)
Sundal/black channa dhal - 1/2 cup (boiled)
Mint leaves - 1/2 bunch
Coriander leaves - 1/2 bunch
Green chilly - 3
Ginger - 1 inch size
Pepper - 1 tsp
Cumin seeds - 1 tsp
Coriander seeds - 1 tsp
Tamarind - small lemon size
Lemon - 1
Salt
Oil
Method:
First we need to make poori. So take a bowl, in this add sooji, maida and 1/2 tsp of salt, mix well. Slowly add water, make it like a tight dough. Divide them into equal balls. Roll the dough. Take a small lid of the bottle or a cookie cutter, to cut the dough, like a small poori. Fry them into the hot oil, so we can get the fluffy poori.
To make pani, take the mixer grinder, add mint leaves, coriander leaves, green chilies, ginger, pepper, cumin and coriander seeds, grind them like a coarse paste. Soak the tamarind in the water and extract the julce. Pour the tamarind juice in the bowl, add lemon juice, salt and the paste what we made. Mix well. Add more water and check the salt level. Strain the pani with the strainer. Do not throw the strained paste. Keep it aside. Now the pani is ready.
For stuffing, Take the boiled potato, mash the potato and add the boiled channa dhal. Now mix the masala paste what we strained from the pani add the salt as well. Mix the stuffing. Now it is ready for filling.
To make pani poori, break the poori and put the stuffing inside, pour some pani inside the poori and it is ready to eat.
