Vegetable Bajji

Ingredients:

Kadalai mavu/Gram flour/Besan - 1 cup

Arisi mavu/Rice flour - 1/2 cup

Chili powder - 1 tsp

Vegetables - Eggplant/Brinjal, Potato

Baking soda - 3 pinches

Perungayam/Asafoetida/Hing

Salt 

Oil

Water

Method:

In a bowl, take besan and rice flour, add salt, baking soda, asafoetida and chili powder. Mix well with hands, add water little by little and mix well with the hands, keep the batter to set aside for 15 minutes. Cut the vegetable as thin slices. We can use most of the vegetables like eggplant, potato, bell pepper, cauliflower, onion, plantain to make bajji. We can use bread, boiled egg and  pappad also. Heat the oil in a pan, to check the oil, drop the small bajji batter into the oil, if the batter came up it is ready to fry. Take the slice of vegetable. dip into the bajji batter and drop into the oil. Fry them in medium fire. Cook well in both sides. Bajji is ready, serve with coconut chutney or ketchup.
